Avocado Oil Marinated Grilled Vegetables

Ingredients:-

  • 1 red bell pepper, sliced into strips
  • 1 yellow bell pepper, sliced into strips
  • 1 zucchini, sliced into rounds
  • 1 yellow squash, sliced into rounds
  • 1 red onion, sliced into rounds
  • 1 cup cherry tomatoes
  • 1/4 cup AEVO Organic Extra Virgin Avocado Oil
  • 2 cloves garlic, minced
  • 1 tbsp balsamic vinegar
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Cooking Method:-

  1. Prepare the Marinade:- In a large bowl, whisk together AEVO Organic Extra Virgin Avocado Oil, minced garlic, balsamic vinegar, dried oregano, dried basil, salt, and pepper.
  2. Marinate the Vegetables:- Add the bell peppers, zucchini, yellow squash, red onion, and cherry tomatoes to the bowl. Toss the vegetables to coat them evenly with the marinade. Let them marinate for at least 30 minutes to enhance the flavors.
  3. Preheat the Grill:- Preheat your grill to medium-high heat.
  4. Grill the Vegetables:- Place the marinated vegetables on the grill. Grill each side for about 4-5 minutes, or until they are tender and have nice grill marks.
  5. Serve:- Remove the vegetables from the grill and transfer them to a serving platter. Garnish with fresh chopped parsley. Serve warm.
