Avocado Oil Marinated Tofu with AEVO

Preparation Time: 30 minutes (plus marinating time)

Ingredients:

  • 1 block (14-16 oz) extra-firm tofu, pressed and cubed.
  • 1/4 cup Avocado Extra Virgin Oil (AEVO).
  • 2 tablespoons soy sauce (or tamari for a gluten-free option).
  • 1 tablespoon rice vinegar.
  • 1 tablespoon maple syrup or agave nectar.
  • 2 cloves garlic, minced.
  • 1 teaspoon ground ginger.
  • 1/2 teaspoon onion powder.
  • Salt and pepper, to taste.

Optional toppings: sesame seeds, chopped green onions, cilantro.

Directions:

1. Press Tofu:

  • Place the block of tofu between two clean kitchen towels or paper towels.
  • Press the tofu with a heavy object (like a cast-iron skillet) for at least 15-20 minutes to remove excess water.
  • Cut the pressed tofu into bite-sized cubes.

2. Prepare Marinade:

  • In a bowl, whisk together AEVO, soy sauce, rice vinegar, maple syrup or agave nectar, minced garlic, ground ginger, onion powder, salt, and pepper.

3. Marinate Tofu:

  • Place the tofu cubes in a shallow dish or a resealable plastic bag.
  • Pour the marinade over the tofu, ensuring all pieces are well-coated.
  • Marinate in the refrigerator for at least 2-4 hours, or preferably overnight for maximum flavor. Toss or turn occasionally to distribute the marinade evenly.

4. Cook Tofu:

  • Preheat the oven to 375°F (190°C).
  • Place the marinated tofu on a lined baking sheet in a single layer.
  • Bake for 25-30 minutes, flipping halfway through, until the tofu is golden and slightly crispy.

5. Serve:

  • Garnish with sesame seeds, chopped green onions, and cilantro, if desired.
