Avocado Oil Pesto Pasta Recipe with AEVO

Ingredients: -

  • 2 cups fresh basil leaves, packed
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup AEVO Oil (Avocado Extra Virgin Oil)
  • 1/3 cup pine nuts, toasted
  • 3 garlic cloves, peeled
  • Salt and pepper to taste
  • 1 lb (450g) pasta of your choice
  • 1/2 cup cherry tomatoes, halved
  • Parmesan cheese for garnish (optional)

Preparation Time: - 15 minutes

Directions: -

1. Prepare the Pesto: -

  • In a food processor, combine the fresh basil, grated Parmesan cheese, toasted pine nuts, and peeled garlic cloves.
  • Pulse the ingredients until coarsely chopped.

2. Add AEVO Oil: -

  • With the food processor running, slowly pour in the AEVO Oil until the mixture is well combined and forms a smooth paste.
  • Season with salt and pepper to taste. Blend again to incorporate.

3. Cook the Pasta: -

  • Cook the pasta according to the package instructions in a pot of salted boiling water until al dente.
  • Reserve a cup of pasta water before draining.

4. Combine Pasta and Pesto: -

  • In a large mixing bowl, toss the cooked pasta with the freshly prepared avocado oil pesto, ensuring each strand is well-coated.
  • If the pasta seems dry, add a little reserved pasta water gradually until the desired consistency is reached.

5. Garnish and Serve:- 

  • Top the pesto pasta with halved cherry tomatoes and garnish with additional Parmesan cheese if desired.

6. Enjoy: -

  • Serve the Avocado Oil Pesto Pasta immediately, savoring the vibrant flavors and the richness of AEVO Oil.
