Avocado Toast with AEVO Avocado Oil

Ingredients

  • 2 ripe avocados
  • 4 slices of whole-grain or sourdough bread
  • 2 tbsp AEVO Organic Extra Virgin Avocado Oil
  • 1 lemon (for juice and zest)
  • Salt and pepper to taste
  • Red pepper flakes (optional)
  • Cherry tomatoes, halved (optional)
  • Fresh herbs like cilantro, parsley, or chives (optional)
  • Poached or fried eggs (optional, for added protein)

Cooking Method

1. Prepare Avocados

  • Cut the avocados in half, remove the pits, and scoop the flesh into a bowl.
  • Mash the avocados with a fork until you reach your desired consistency (smooth or chunky).

2. Season Avocado

  • Drizzle 1 tablespoon of AEVO Avocado Oil over the mashed avocado.
  • Add the juice of half a lemon, salt, and pepper to taste. Mix well.

3. Toast Bread

  • Toast the slices of whole-grain or sourdough bread until they are golden and crisp.

4. Assemble Toast

  • Spread the mashed avocado mixture evenly over the toasted bread slices.

5. Finish with Toppings

  • Drizzle the remaining 1 tablespoon of AEVO Avocado Oil over the avocado toast.
  • Sprinkle with red pepper flakes, if using.
  • Top with cherry tomato halves, fresh herbs, and lemon zest for added flavor and visual appeal.
  • If desired, add a poached or fried egg on top for extra protein.

6. Serve

  • Serve immediately while the toast is still warm.
