Candlemas Crepes with AEVO

Preparation Time:- 30 minutes


  • 1 cup all-purpose flour.
  • 2 eggs.
  • 1/2 cup milk.
  • 1/2 cup water.
  • 1/4 teaspoon salt.
  • 2 tablespoons AEVO (Avocado Extra Virgin Oil).
  • 1 tablespoon sugar (optional).
  • 1 teaspoon vanilla extract (optional).

For Filling:

  • 1 cup fresh berries (strawberries, blueberries, raspberries).
  • 1 cup whipped cream.
  • Powdered sugar for dusting.


1. Prepare the Crepe Batter:

  • In a blender, combine the flour, eggs, milk, water, salt, AEVO oil, sugar, and vanilla extract (if using).
  • Blend until the batter is smooth. Allow it to rest for at least 20 minutes to let the flour fully absorb the liquid.

2. Cook the Crepes:

  • Heat a non-stick skillet or crepe pan over medium heat.
  • Lightly grease the pan with a small amount of AEVO oil.
  • Pour a small amount of batter (about 1/4 cup) into the center of the pan, swirling it around to coat the bottom evenly.
  • Cook for about 1-2 minutes until the edges begin to lift, then flip and cook the other side for an additional 1-2 minutes.
  • Repeat until all the batter is used, stacking the crepes on a plate as you go.

3. Assemble the Crepes:

  • Lay out a crepe and add a spoonful of whipped cream down the center.
  • Add a handful of fresh berries on top of the whipped cream.
  • Fold the sides of the crepe over the filling, creating a rolled shape.
  • Repeat with the remaining crepes.

4. Serve:

  • Place the filled crepes on serving plates.
  • Dust with powdered sugar and additional berries for garnish, if desired.
