Carrot Cake with AEVO Avocado Oil Recipe with AEVO

Ingredients: -

  • 2 cups grated carrots
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup brown sugar, packed
  • 1/2 cup AEVO Avocado Oil
  • 1/2 cup unsweetened applesauce
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)
  • Cream cheese frosting (optional)

Directions: -

1. Preheat Oven: -

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.

2. Mix Dry Ingredients: -

  • In a large bowl, whisk together the all-purpose flour, whole wheat flour, cinnamon, nutmeg, baking powder, baking soda, and salt.

3. Combine Wet Ingredients: -

  • In another bowl, beat together the brown sugar, AEVO Avocado Oil, applesauce, eggs, and vanilla extract until well combined.

4. Mix Wet and Dry Ingredients: -

  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.

5. Fold in Carrots and Nuts: -

  • Gently fold in the grated carrots and chopped walnuts (if using) into the batter.

6. Bake: -

  • Pour the batter into the prepared baking pan and smooth the top. Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.

7. Cool: -

  • Allow the carrot cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

8. Frosting (Optional):

  • Once the cake is completely cooled, frost it with cream cheese frosting if desired.
