Chicken Fricassée with Biscuits Recipe with AEVO

Ingredients:

For the Chicken Fricassée:

  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tbsp AEVO Oil (Avocado Extra Virgin Oil)
  • 1 cup diced onions
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup frozen peas
  • 1 tsp dried thyme

Salt and pepper to taste

 For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup milk

Directions:

Chicken Fricassée:

  1. In a large skillet, heat AEVO Oil over medium-high heat. Add chicken pieces and cook until browned on all sides. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add onions, carrots, celery, and garlic. Sauté until vegetables are tender, about 5 minutes.
  3. Sprinkle flour over the vegetables, stirring continuously to create a roux. Cook for an additional 2 minutes to eliminate the raw flour taste.
  4. Gradually whisk in chicken broth, ensuring there are no lumps. Bring the mixture to a simmer.
  5. Add the browned chicken back to the skillet along with frozen peas and dried thyme. Season with salt and pepper to taste. Simmer for 20-25 minutes until the chicken is cooked through and the sauce thickens.

Biscuits:

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
  4. Pour in the milk and stir until just combined. Do not overmix.
  5. Drop spoonfuls of the biscuit dough onto the chicken mixture.
  6. Bake in the preheated oven for 15-18 minutes or until the biscuits are golden brown.
