Chilled Avocado Cucumber Soup

Ingredients:

  • 2 ripe avocados
  • 1 large cucumber, peeled and diced
  • 1 garlic clove
  • 1 cup Greek yogurt
  • 1/2 cup vegetable broth
  • 2 tablespoons lime juice
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions:

1. Prepare Ingredients:

  • Peel and dice the cucumber.
  • Cut the avocados in half, remove the pit, and scoop out the flesh.
  • Peel the garlic clove.

2. Blend:

  • In a blender, combine the avocados, diced cucumber, garlic, Greek yogurt, vegetable broth, and lime juice.
  • Blend until smooth and creamy.

3. Season:

  • Taste the soup and season with salt and pepper to your preference.
  • Blend again briefly to mix in the seasoning.

4. Chill:

  • Pour the soup into a large bowl or individual serving bowls.
  • Cover and refrigerate for at least 1 hour to let the flavors meld and to chill thoroughly.

5. Serve:

  • Before serving, give the soup a good stir.
  • Garnish with fresh dill.
  • Serve cold.
