Christmas Roast Beef with Avocado Oil

Ingredients

  • 4–5 lbs (1.8–2.3 kg) beef rib roast or top sirloin roast
  • 2 tbsp AEVO avocado oil
  • 4 cloves garlic, minced
  • 2 tsp fresh rosemary, finely chopped
  • 2 tsp fresh thyme, finely chopped
  • 1 tbsp Dijon mustard
  • 1 tbsp coarse sea salt
  • 1 tsp black pepper
  • 1 large onion, quartered
  • 2 carrots, cut into large chunks
  • 2 celery stalks, cut into large chunks
  • 1 cup beef broth (or red wine, optional)

Instructions

  1. Preheat the Oven:
    Preheat your oven to 450°F (232°C). Position the rack in the center of the oven.
  2. Prepare the Beef:
    Pat the beef dry with a paper towel to ensure a good crust. Rub it generously with 1 tablespoon of AEVO avocado oil.
  3. Make the Herb Crust:
    In a small bowl, mix the minced garlic, rosemary, thyme, Dijon mustard, remaining 1 tablespoon avocado oil, salt, and pepper. Rub this mixture all over the beef to coat evenly.
  4. Prepare the Vegetables:
    In a roasting pan, spread the onions, carrots, and celery. Place the seasoned beef on top of the vegetables. This will help infuse flavor into the meat and catch the drippings for the sauce.
  5. Roast the Beef:
    Roast at 450°F (232°C) for 15 minutes to sear the exterior. Reduce the oven temperature to 325°F (163°C) and continue roasting for about 1.5–2 hours, or until the internal temperature reaches:
    • Medium-rare: 135°F (57°C)
    • Medium: 145°F (63°C)
  6. Rest the Roast:
    Remove the roast from the oven and transfer it to a cutting board. Tent it with foil and let it rest for 15–20 minutes to retain juices.
  7. Make the Pan Sauce (Optional):
    Place the roasting pan with the vegetables and drippings over medium heat. Add the beef broth (or wine) and scrape up any browned bits from the pan. Simmer for 5 minutes, then strain into a serving bowl.
  8. Carve and Serve:
    Slice the beef against the grain and serve with roasted vegetables and the pan sauce.
