Creamy Cauliflower Mash with Avocado Oil

This creamy cauliflower mash is a healthy, low-carb alternative to traditional mashed potatoes. AEVO Avocado Oil adds a silky texture and enhances the flavor while boosting the nutritional value.

Ingredients:

  • 1 large head of cauliflower, cut into florets (about 4 cups)
  • 2 tablespoons AEVO Avocado Oil
  • 2 cloves garlic, minced
  • 1/4 cup unsweetened almond milk (or any milk of your choice)
  • 2 tablespoons nutritional yeast (optional, for a cheesy flavor)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Steam the Cauliflower:
    In a large pot, steam the cauliflower florets for about 10-12 minutes, or until they are tender and can be easily pierced with a fork. Drain well to remove excess water.
  2. Sauté the Garlic:
    In a small skillet, heat 1 tablespoon of AEVO Avocado Oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant. Be careful not to burn the garlic.
  3. Blend the Cauliflower:
    Transfer the steamed cauliflower to a food processor or blender. Add the sautéed garlic, the remaining 1 tablespoon of AEVO Avocado Oil, almond milk, and nutritional yeast (if using).
  4. Season and Blend:
    Add salt and pepper to taste. Blend until the mixture is smooth and creamy. If the mash is too thick, add a little more almond milk, one tablespoon at a time, until you reach your desired consistency.
  5. Serve and Garnish:
    Transfer the cauliflower mash to a serving bowl. Garnish with freshly chopped parsley for a pop of color and added freshness.
