For Bhalle: -
1. Wash and soak urad dal and moong dal separately for 4-6 hours.
2. Grind them into a smooth batter, adding very little water.
3. Add grated ginger, chopped green chili, salt, cumin seeds, and asafoetida to the batter. Mix well.
4. Heat AEVO Oil in a pan for deep frying.
5. Wet your hands and drop small portions of the batter into the hot oil.
6. Fry until golden brown and crisp. Drain excess oil on paper towels.
For Dahi Mixture: -
1. Whisk together yogurt and milk until smooth.
2. Add salt, roasted cumin powder, and red chili powder. Mix well.
For Tamarind Chutney: -
1. In a pan, combine tamarind pulp, jaggery, roasted cumin powder, and salt.
2. Cook on low heat until the chutney thickens, adding water as needed.
Assembling Dahi Bhalle: -
1. Soak the fried bhalle in warm water for 15-20 minutes.
2. Squeeze out excess water gently and place them in a serving dish.
3. Pour the dahi mixture generously over the bhalle.
4. Drizzle tamarind chutney on top.
5. Garnish with chopped coriander leaves.
