Farmers' Market Fresh Vegetable Stir-Fry with AEVO Avocado Oil

Ingredients:

  • 2 tbsp AEVO Organic Extra Virgin Avocado Oil
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 carrot, julienned
  • 1 cup mushrooms, sliced
  • 2 tbsp soy sauce (low-sodium preferred)
  • 1 tbsp hoisin sauce
  • 1 tsp sesame oil
  • Salt and pepper to taste
  • Cooked brown rice or quinoa (optional, for serving)

Cooking Method:-

  1. Prep Vegetables:- Wash and slice all vegetables as mentioned in the ingredients list.
  2. Heat AEVO Avocado Oil:- In a large skillet or wok, heat AEVO Organic Extra Virgin Avocado Oil over medium-high heat.
  3. Sauté Onion and Garlic:- Add sliced onion and minced garlic to the hot oil. Sauté for 2-3 minutes until the onion is translucent and fragrant.
  4. Add Vegetables:- Add bell pepper, zucchini, yellow squash, broccoli, snap peas, carrot, and mushrooms to the skillet. Stir-fry for about 5-7 minutes, or until the vegetables are tender yet still crisp.
  5. Season:- Drizzle soy sauce, hoisin sauce, sesame oil, salt, and pepper over the vegetables. Toss well to coat evenly.
  6. Cook Until Combined:- Continue cooking for another 2-3 minutes, stirring constantly, until the sauces are well combined and the vegetables are coated.
  7. Serve:- Remove the skillet from heat. Serve the Farmers' Market Fresh Vegetable Stir-Fry immediately over cooked brown rice or quinoa if desired.
