Grilled Avocado Oil Chicken Salad (Using Organic AEVO Avocado Oil)

Ingredients: -

  • 2 boneless, skinless chicken breasts
  • 2 tbsp organic AEVO Avocado Oil (for grilling)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 4 cups mixed salad greens (arugula, spinach, or romaine)
  • 1 avocado, sliced
  • 1 cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • ¼ cup red onion, thinly sliced
  • ¼ cup feta cheese or goat cheese (optional)
  • 2 tbsp sunflower seeds or nuts (optional)

For the Dressing: -

  • 3 tbsp organic AEVO Avocado Oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey (optional for sweetness)
  • Salt and pepper to taste

Instructions: -

Step 1: Marinate and Grill the Chicken

1. Preheat your grill or grill pan to medium-high heat.

2. In a small bowl, combine the garlic powder, onion powder, smoked paprika, salt, and pepper. Rub the mixture evenly over both sides of the chicken breasts.

3. Drizzle the chicken with 2 tbsp of organic AEVO Avocado Oil to coat evenly. Let the chicken sit for about 10 minutes to absorb the seasoning.

4. Place the chicken on the preheated grill. Grill for about 6-8 minutes per side, depending on the thickness of the chicken breasts, until the internal temperature reaches 165°F (75°C).

5. Once fully cooked, remove the chicken from the grill and allow it to rest for a few minutes before slicing it into strips.

Step 2: Prepare the Salad Base

While the chicken is grilling, prepare the salad base. In a large salad bowl, toss together the mixed salad greens, avocado slices, cucumber, cherry tomatoes, red onion, and any optional ingredients like cheese or seeds.

Step 3: Make the Dressing

1. In a small bowl or jar, whisk together 3 tbsp of organic AEVO Avocado Oil, lemon juice, Dijon mustard, and honey (if using). Season with salt and pepper to taste.

2. Drizzle the dressing over the salad and toss gently to combine.

Step 4: Assemble the Salad

1. Once the chicken has rested, arrange the grilled chicken strips on top of the salad.

2. Toss lightly again, if desired, or leave the chicken resting on top for presentation.

3. Serve immediately, either as a light meal or as a hearty side dish.
