Grilled Cheese and Tomato Soup with AEVO Avocado Oil

Grilled Cheese

Ingredients:-

  • 4 slices of whole-grain bread
  • 2 tbsp AEVO Organic Extra Virgin Avocado Oil
  • 4 slices of cheddar cheese
  • 1/2 tsp garlic powder (optional)
  • 1/2 tsp dried oregano (optional)

Instructions:-

  1. Prepare Bread:- Brush one side of each slice of bread with AEVO Avocado Oil. Sprinkle with garlic powder and oregano if desired.
  2. Assemble Sandwiches:- Place 1 slice of cheese between two slices of bread, with the oiled sides facing out.
  3. Grill Sandwiches:- Heat a non-stick skillet over medium heat. Place the sandwiches in the skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
  4. Serve:- Remove from the skillet and cut diagonally. Serve hot alongside the tomato soup.

Tomato Soup

Ingredients:-

  • 2 tbsp AEVO Organic Extra Virgin Avocado Oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions:-

  1. Sauté Vegetables:-  In a large pot, heat AEVO Avocado Oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
  2. Add Tomatoes and Broth:- Pour in the crushed tomatoes and vegetable broth. Stir in the dried basil, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
  3. Blend Soup:- Use an immersion blender to blend the soup until smooth. Alternatively, you can transfer the soup to a blender in batches and blend until smooth, then return it to the pot.
  4. Add Cream:- Stir in the heavy cream and simmer for another 5 minutes.
  5. Serve:- Ladle the soup into bowls and garnish with fresh basil leaves if desired. Serve hot with the grilled cheese sandwiches.
