Grilled Shrimp Skewers with Avocado Oil

Ingredients

  • 1 lb (450 g) large shrimp, peeled and deveined
  • 2 tbsp AEVO avocado oil
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp chili powder (optional, for a spicy kick)
  • 1 tbsp lemon juice
  • 1 tbsp fresh parsley, finely chopped
  • Salt and pepper, to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. Prepare the Shrimp Marinade:
    • In a mixing bowl, combine AEVO avocado oil, minced garlic, paprika, chili powder (if using), lemon juice, salt, and pepper. Mix well.
  2. Marinate the Shrimp:
    • Add the shrimp to the marinade and toss to coat evenly. Cover the bowl and let the shrimp marinate in the refrigerator for 20–30 minutes.
  3. Prepare the Skewers:
    • Thread 3–4 shrimp onto each soaked wooden skewer, ensuring they are evenly spaced.
  4. Preheat the Grill:
    • Preheat your grill or grill pan to medium-high heat. Lightly grease the grates with avocado oil to prevent sticking.
  5. Grill the Skewers:
    • Place the shrimp skewers on the grill and cook for 2–3 minutes per side, or until the shrimp turn pink and opaque. Avoid overcooking to retain tenderness.
  6. Garnish and Serve:
    • Remove the skewers from the grill and sprinkle with fresh parsley. Serve with lemon wedges for extra zest. Pair with a side salad or rice for a complete meal.
