Grilled Vegetable Platter with AEVO Oil

Ingredients:-

  • 2 medium zucchini, sliced
  • 2 medium yellow squash, sliced
  • 1 large red bell pepper, sliced into strips
  • 1 large yellow bell pepper, sliced into strips
  • 1 large red onion, sliced into rings
  • 8 oz. cherry tomatoes
  • 2 tbsp AEVO Organic Extra Virgin Avocado Oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • Fresh parsley, chopped (for garnish)

Cooking Method:-

1. Preheat the Grill:- Preheat your grill to medium-high heat.

2. Prepare the Vegetables:-  In a large bowl, combine the zucchini, yellow squash, bell peppers, red onion, and cherry tomatoes.

3. Season the Vegetables:-  Drizzle AEVO Organic Extra Virgin Avocado Oil over the vegetables. Sprinkle with salt, black pepper, oregano, thyme, and garlic powder. Toss the vegetables to coat them evenly with the oil and seasonings.

4. Grill the Vegetables:- Place the seasoned vegetables on the grill. Cook for about 5-7 minutes on each side, or until the vegetables are tender and have nice grill marks. Turn the vegetables occasionally to ensure they cook evenly.

5. Serve:- Transfer the grilled vegetables to a serving platter. Garnish with chopped fresh parsley.

6. Enjoy:- Serve the Grilled Vegetable Platter warm as a side dish or over a bed of greens for a delicious and healthy salad.
