Ingredients: -

  • 1 1/2 pounds boneless lamb, cut into cubes
  • 2 tbsp AEVO Avocado Oil
  • 1 tsp minced garlic
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 red onion, sliced
  • 1/4 cup fresh mint leaves, chopped
  • Juice of 1 lemon

Directions: -

1. Marinate the Lamb: -

  • In a bowl, combine the cubed lamb, AEVO Avocado Oil, minced garlic, dried rosemary, salt, and pepper. Ensure the lamb is well coated.
  • Let it marinate for at least 10 minutes to allow the flavors to infuse.

2. Sear the Lamb: -

  • Heat a pan over medium-high heat and add AEVO Avocado Oil.
  • Sear the marinated lamb cubes until browned on all sides. This step adds a rich flavor to the dish.

3. Add Vegetables: -

  • Reduce the heat to medium. Add cherry tomatoes and sliced red onion to the pan.
  • Saute the vegetables until they are tender and the lamb is cooked to your preferred level of doneness.

4. Finish with Freshness: -

  • Remove the pan from heat. Add chopped mint leaves and squeeze fresh lemon juice over the lamb and vegetables.
  • Toss everything together to combine, ensuring the flavors are evenly distributed.

5. Serve: -

  • Plate the lamb and vegetable mixture, and garnish with additional mint leaves if desired.
