Mushrooms and Vegetable Mix with AEVO Oil

Ingredients: -

  • 2 tbsp AEVO Oil (Avocado Extra Virgin Oil)
  • 1 cup sliced mushrooms (cremini or button)
  • 1 cup broccoli florets
  • 1 bell pepper, thinly sliced (any color)
  • 1 zucchini, sliced into rounds
  • 1 carrot, julienned
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Directions: -

1. Preheat and Prep: -

  • Heat AEVO Oil in a large skillet over medium-high heat.
  • Add minced garlic and sauté until fragrant.

2. Sauté Mushrooms: -

  • Add sliced mushrooms to the skillet.
  • Sauté until mushrooms are golden brown and release their moisture.

3. Add Vegetables: -

  • Incorporate broccoli florets, sliced bell pepper, zucchini rounds, and julienned carrots to the skillet.
  • Stir-fry for 5-7 minutes until vegetables are tender-crisp.

4. Seasoning: -

  • Sprinkle dried thyme, salt, and pepper over the vegetable mix.
  • Toss to evenly coat the vegetables with the seasoning.

5. Finish and Garnish: -

  • Cook for an additional 2 minutes to let the flavors meld.
  • Remove from heat and garnish with fresh parsley.

6. Serve: -

  • Spoon the delicious mushroom and vegetable mix onto plates or bowls.
