Mutton Curry with AEVO Oil

Ingredients:

  • 1 kg mutton, cut into pieces

  • 3 tablespoons AEVO avocado oil

  • 2 large onions, finely chopped

  • 2 tomatoes, pureed

  • 1 tablespoon ginger-garlic paste

  • 2-3 green chilies, slit

  • 1 cup plain yogurt

  • 1 teaspoon turmeric powder

  • 1 tablespoon red chili powder

  • 1 tablespoon coriander powder

  • 1 teaspoon cumin powder

  • 1 teaspoon garam masala powder

  • 2-3 bay leaves

  • 4-5 cloves

  • 4-5 green cardamom pods

  • 1 cinnamon stick

  • 1 cup water

  • Salt to taste

  • Fresh coriander leaves for garnish


 

Cooking Method:-

1. Marinate the Mutton:-

  • In a large bowl, combine the mutton pieces, yogurt, turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well and let it marinate for at least 1 hour, preferably overnight in the refrigerator.

2. Prepare the Curry:-

  • Heat AEVO avocado oil in a large heavy-bottomed pan or pressure cooker over medium heat.

  • Add bay leaves, cloves, cardamom pods, and cinnamon stick. Sauté for a minute until fragrant.

  • Add the finely chopped onions and sauté until they turn golden brown.

  • Add the ginger-garlic paste and green chilies. Cook for 2-3 minutes until the raw smell disappears.

  • Add the tomato puree and cook until the oil starts to separate from the mixture.

3. Cook the Mutton:-

  • Add the marinated mutton to the pan and mix well with the onion-tomato mixture.

  • Cook on medium-high heat for about 10 minutes, stirring occasionally, until the mutton is browned and the spices are well coated.

  • Add water, stir, and bring to a boil.

4. Pressure Cook or Simmer:-

  • If using a pressure cooker, cover and cook on medium heat for about 20-25 minutes (or for 4-5 whistles) until the mutton is tender.

  • If using a regular pan, cover and simmer on low heat for 1-1.5 hours, or until the mutton is tender and the curry thickens. Stir occasionally to prevent sticking.

5. Finish the Dish:-

  • Once the mutton is cooked, add garam masala powder and adjust salt if needed. Mix well and simmer for another 5 minutes.

  • Garnish with fresh coriander leaves.

6. Serve:-

  • Serve hot with steamed rice, naan, or roti.
