Salmon Traybake with Smoked Haddock Recipe with AEVO

Preparation Time: - 30 minutes 

Cooking Time: - 25 minutes  

Serves: - 4

Ingredients: -

  • 4 salmon fillets
  • 2 smoked haddock fillets
  • 2 tbsp AEVO Oil (Avocado Extra Virgin Oil)
  • 1 lemon, thinly sliced
  • 1 red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tbs paprika
  • 1 tbs dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Directions: -

1. Preheat the Oven: -

  • Preheat your oven to 375°F (190°C).

2. Prepare the Tray: -

  • Drizzle 1 tbsp of AEVO Oil on a baking tray.
  • Place the salmon and smoked haddock fillets on the tray.

3. Seasoning: -

  • In a small bowl, mix the minced garlic, paprika, dried thyme, salt, and pepper.
  • Sprinkle the seasoning mix evenly over the fillets.

4. Layer with Aromatics: -

  • Lay lemon slices and red onion over the fillets.
  • Drizzle the remaining AEVO Oil over the top.

5. Bake: -

  • Place the tray in the preheated oven and bake for 20-25 minutes or until the fish is cooked through and flakes easily.

6. Garnish: -

  • Remove from the oven and garnish with freshly chopped parsley.

7. Serve: -

  • Serve the salmon and smoked haddock fillets on a bed of your favorite greens or with a side of roasted vegetables.
